Ingredients

  • 1 can pumpkin

  • 4 egs

  • 3/4 cup vegetable oil

  • 2 tsp vanilla extract

  • 2 cups flour

  • 2 cups sugar

  • 1 Tbsp pumpkin pie spice

  • 2 tsp ground cinnamon

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • FROSTING

  • 6 Tbsp butter or margarine

  • 1 pkg cream cheese, softened

  • 1 tsp vanilla extract

  • 1 tsp milk

  • 1/2 tsp salt

  • 1-1/2 to 2 cups confectioners sugar

Directions

In a mixing bowl, beat pumpkin, eggs, oil, and vanilla until well mixed. Combine dry ingredients. Stir into pumpkin mixture and mix well. Pour into a greased 15x10x1 inch baking pan. Bake at 350F for 20-25 minutes. Test with toothpick. Cool. In a small bowl, beat the butter, cream cheese, vanilla, and milk and salt until smooth. Add confectioners sugar and mix well. Frost. Store in refrigerator.
