Minestrone Hamburger Soup

Ingredients
- 1 lb ground beef
- 1 cup chopped onion
- 1 cup cubed raw potatoes
- 1 cup sliced raw carrots
- 1/2 cup diced celery
- 1 cup shredded cabbage (mom omits)
- 1 #2 can tomatoes (2 1/2 cups)
- 1/2 cup raw regular or processed white rice
- 1 small bay leaf, crushed
- 1/2 tsp dried thyme
- 1/4 tsp dried basil
- 5 tsp salt
- 1/4 tsp dried oregano
- 1/8 tsp pepper
- 6 cups water
- grated cheddar cheese (mom omits)

Preparation
Step 1
In a kettle, book beef with onions until browned. Add potatoes, carrots, celery, cabbage, and tomatoes. Bring to a boil and add rice and seasoning and water.
Cover and simmer 1 hour. Serve sprinkled with cheddar cheese.
