Oatmeal Toffee Cookies

Ingredients

  • 1 cup butter
  • 2 eggs
  • 2 cups packed light brown sugar
  • 2 tsp vanilla extract
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups quick cooking oats
  • 1 1/3 cups (one 8 oz package) toffee bits

Preparation

Step 1

1. Preheat oven to 375 degrees.

2. Beat butter, eggs, brown sugar and vanilla. Add flour, baking soda, cinnamon and salt; beat until blended. Stir in oats and toffee bits with a spoon.

3. Drop by rounded teaspoons two inches apart on a cookie sheet lightly coated with cooking spray.

4. Bake at 375 degrees for 8-10 minutes or until edges are lightly browned. Cool one minute then remove to wire rack.
