Ingredients
- 2 egg yolks
- 1 tsp. salt
- dash of red pepper
- juice of 1 small lemon
- 1/2 cup melted butter
- 1/4 cup white wine
- 2 Tbs. tarragon vinegar
- 1 tsp. dried tarragon
- 1 Tbs. chopped shallots
- 1/4 tsp. freshly ground pepper

Step 1
and butter alternately, beating constantly. Meanwhile combine following ingredients in a small pan and bring to a boil. Cook rapidly until reduced to 2 Tbs. or less. Add to the blender and beat for 8 seconds. (Extra sauce can be refrigerated and reheated by setting the jar in a pan of hot water).
