Ingredients
- 2 cups israeli couscous or brown rice
- cooked
- 3 cups cauliflower florets and 1 sliced shallot
- s and p
- dash cinnamon
- splash red wine vinegar
- chopped parsley
- 1/4 cup chopped dates
Preparation
Step 1
cook rice or couscous and set aside
cook cauliflower and 1 sliced shallot in olive oil for 6 mins.
season with salt and pepper.
Add a pinch of cinnamon and 1/4 cup choped dates;cook 2 more mins. Add to the couscous along with a splash of red wine vinegar, some chopped parslep and salt and pepper
