TOFU PARMIGIANA

Ingredients

  • ½ cup seasoned bread crumbs
  • 5 tablespoons parmesan cheese
  • 2 tsp dried oregano
  • Salt and pepper
  • 1 (12 oz) package firm tofu
  • 2 tablespoons olive oil
  • 1 (8oz can tomato sauce
  • ½ tsp dried basil
  • 1 clove garlic, minced
  • 4 oz mozzarella cheese

Preparation

Step 1

Combine bread crumbs, parm. Cheese, oregano, salt and pepper. Slice tofu ¼ thick and place in cold water. One at a time, press tofu slices into the breadcrumb mixture – coat all sides. Heat oil. Cook tofu until crisp on all sides. Combine tomato sauce, basil, garlic, and remaining oregano. Place thin layer of sauce in an 8 inch square baking pan. Arrange tofu slices in the pan. Spoon remaining sauce over tofu. Top with mozzarella and parmesan cheese. Bake 400 for 20 minutes
