  • 2 lbs chicken breasts, cut 1/2 lengthwise
  • 1 tbls chopped green onions
  • 1 tbls snipped parsley
  • 1 clove garlic, minced
  • 1/2 stick of butter, chilled
  • caraway cheese
  • 1 beaten egg
  • 1/4 cup flour
  • 1/4 cup bread crumbs
  • 1 tbls butter
  • 1 tbls cooking oil

Step 1

preheat oven to 400. pound chicken to 1/8 inch thickness. sprinkle with salt and pepper. combine onion, parsley, and garlic and sprinkle on chicken. cut chilled butter into four patties for the chicken and cut the cheese. place one of each into the center of each chicken piece. fold in sides and roll. stir together 1 egg and 1 tbls water. coat rolls with flour, dip into egg mixture, and then coat with crumbs. cover and chill 1-24 hrs.

in a large skillet melt the 1 tbls butter, add oil. add chilled chicken rolls, brown each side. transfer to baking dish, bake in oven for 15-18 mins or till no longer pink
