Ingredients
- 1/3 cup butter
- 1/3 cup flour
- 1 1/2 cups milk
- 1 tsp salt
- 2 cups (8 oz) cheddar cheese
- 6 eggs, seperated

Preparation
Step 1
Met butter. Add flour, stirring. Add milk, slowly. Add seasonings and stir. Cook until thickened. Add cheese; stir until melted. Remove from heat. Add slightly beaten yolks. Cool. Fold in stiff egg whites. Pour into 2 qt souffle dish. With tip of spoon, make a track 1" from edge aroung pan. Bake at 300 for 1 hour.
