Ingredients
- 6 slices Texas Toast-style bread, crusts trimmed
- 1 pound bacon, cooked crisp, drained, and crumbled
- 2-3 pounds Roma tomatoes, diced
- 1/4 cup vinegar
- Salt and freshly ground pepper, divided
- 1 head Boston lettuce or leaf lettuce, shredded
- 3/4 cup mayonnaise
- 1T. lemon juice
- 1 T. Tabasco sauce
Preparation
Step 1
Preheat oven to 325 degrees. Spray cups of a mini muffin pan with cooking oil spray. Cut bread into fourths. press each square gently, but firmly into each cup. Bake for 10 minutes until bread is lightly browned and crisp. Cool bread cups and remoce from pan. Toll chopped tomatoes with vinegar, salt, and pepper. Drain on paper towels. Place a small piece of lettuce in each cup and top with tomato mixture. Combine mayonnaise, lemon juice, and Tabasco. Using a small spoon, place a dollop of mayonnaise mixture on top to the tomates. Sprinkle with chopped bacon, salt and pepper. Chill until ready to serve.
