  • 1 c. kosher salt
  • 3 tbls sugar
  • 1 tsp paprika
  • 2 tsp allspice
  • 2 tsp thyme
  • 1 tsp sage
  • crushed bayleaf
  • 1/2 c carrots
  • turnips
  • onions
  • potato

Preparation

Step 1

Stir together the herbs and spices
rub into meat
put in plastic bag with more salt
cure for 2 days in the refrigerator
massage every day
wash off the herbs and spices
cook with vegs for 3-3 1/2 hours
