Ingredients
- 8 - 10 pound meat
- 1 c. kosher salt
- 3 tbls sugar
- 1 tsp paprika
- 2 tsp allspice
- 2 tsp thyme
- 1 tsp sage
- crushed bayleaf
- 1/2 c carrots
- turnips
- onions
- potato

Preparation
Step 1
Stir together the herbs and spices
rub into meat
put in plastic bag with more salt
cure for 2 days in the refrigerator
massage every day
wash off the herbs and spices
cook with vegs for 3-3 1/2 hours
