  • 1 qt. Heavy Cream
  • 8 oz. Semisweet Chocolate
  • 1 cup sugar more TT
  • 5 whole egg
  • 5 egg yolks

Step 1

Heat cream and chocolate gently. Mix sugar, eggs, and yolks until thick and frothy. Should become a very bright yellow. SLOWLY temper egg mixture into cream, strain to ensure smooth texture. In a water bath cook ramekins at 300 degrees for about 30-35 minutes or until jiggly but set. If you have the means use sheet pan for the bottom and cover with an additional sheet pan
