Artichoke Chicken

Ingredients
- 1/4 cup flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 4-5 oz. boneless chicken breasts
- 2 tbls and 1 tsp olive oil
- 2 garlic cloves, minced
- 3/4 cup dry white wine
- 1-9 oz. box frozen artichoke hearts
- 6 scallions, sliced
- 1 tbls. lemon juice
- 1/4 cup blue cheese

Preparation
Step 1
1. Combine flour, 1/2 tsp salt and 1/4 tsp pepper. Dredge chicken with flour mixture and cook over med-high heat in a large skillet in 2 tbsp. olive oil until cooked through (8-10 mins.) Remove from pan, set aside, and keep warm.
2. Add remaining 1 tsp. olive oil to same skillet. Add garlic, and cook until fragrant (about 1 minute.) Add wine and artichoke hearts, and cook over medium heat until artichokes are tender (6 mins.) Stir in remaining 1/2 tsp salt, 1/4 tsp. pepper, scallions and lemon juice. Serve over chicken breasts. Sprinkle with blue cheese.
