Ingredients

  • 1/4 cup flour

  • 1 tsp. salt

  • 1/2 tsp. pepper

  • 4-5 oz. boneless chicken breasts

  • 2 tbls and 1 tsp olive oil

  • 2 garlic cloves, minced

  • 3/4 cup dry white wine

  • 1-9 oz. box frozen artichoke hearts

  • 6 scallions, sliced

  • 1 tbls. lemon juice

  • 1/4 cup blue cheese

Directions

1. Combine flour, 1/2 tsp salt and 1/4 tsp pepper. Dredge chicken with flour mixture and cook over med-high heat in a large skillet in 2 tbsp. olive oil until cooked through (8-10 mins.) Remove from pan, set aside, and keep warm. 2. Add remaining 1 tsp. olive oil to same skillet. Add garlic, and cook until fragrant (about 1 minute.) Add wine and artichoke hearts, and cook over medium heat until artichokes are tender (6 mins.) Stir in remaining 1/2 tsp salt, 1/4 tsp. pepper, scallions and lemon juice. Serve over chicken breasts. Sprinkle with blue cheese.
