Ingredients
- 1 cup water
- 3/4 cup bulgar wheat
- 2 handfuls pine nuts
- 1 tsp ground cumin
- 2 lemons, zested and juiced
- 1/3 cup EVOO
- 1/4 cup mint leaves, chopped
- 1/2 cup cilantro, chopped
- 4 green onions, finely chopped
- 12 grape tomatoes, halved
- 1/2 cucumber, peeled and cubed
- Salt to taste
Preparation
Step 1
Boil the water. Pour bulgar into a bowl and douse it with the boiling water. Let the bulgar stand for 15 minutes to plump.
Lightly toast the pine nuts in a small skillet over low heat. In a salad bowl, combine the cumin, lemon zest and juice and whisk in the EVOO. To the lemon mixture, add the bulgar, herbs, green onions, tomatoes and cucumber. Salt to taste. Toss and let stand for 5 minutes to combine the flavors.
