Stuffed Mushrooms

  • 30 fresh mushrooms
  • 3 tbsp butter
  • 2 tbsp finely chopped onions
  • 2 tbsp finely chopped red peppers
  • 14 Ritz crackers, finely crushed (about 1/2 cup)
  • 2 tbsp parmesan cheese
  • 1/4 tsp basil
  • 1/4 tsp oregano



Step 1

Heat oven to 400 degrees.
Remove stems from mushrooms.
Finely chop stems to make 1/4 cup, discard the rest.
Melt butter in pan,add stems, onions, peppers, and cook until tender.
Stir in cracker crumbs, cheese and spices.
Spoon into mushroom caps.
Place on cookie sheet.
Bake for 15 minutes.

Mushrooms can be prepared ahead and refridgerated until ready to bake.
