Carrot Cake

  • 2 cups flour
  • 1 3/4 cups sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 cup oil
  • 3 eggs,beaten
  • 3 cups shredded carrots



Step 1

Combine dry ingredients
Combine oil and eggs
Mix dry and wet together and fold in carrots
Pour batter into greased and floured 9x13 pan
Bake at 350 degrees for 35 to 40 minutes

Jumbo muffins- 25 minutes

OPTION; combine 1 8oz pkg cream cheese, 1/4 cup sugar and 1 egg, beaten.
Reserve 2 cups batter and pour remaining into a bundt pan. Put cream cheese mixture on top and spoon reserved batter on top, spreading to cover. Bake 55 minutes. Cool for 10 mins and remove from pan.This makes a Surprise Carrot Cake.
