Chipotle Chicken Enchiladas

Ingredients

  • 3 chicken breasts (15oz)
  • 1-2 packet taco seasoning
  • 10 tortillas
  • 1 can chipotle peppers with adobo
  • 1 can Ro-Tel
  • 1 cans red Enchilada Sauce
  • 1 cup shredded cheese

Preparation

Step 1

boil chicken and shred.

Add chicken, taco seasoning and water to a skillet.

Mix in chipotle and rotel

Cook tortillas on a dry skillet.

Fill tortillas and place in dish seam side down.

Top with enchilada sauce and cheese.

Bake at 350 for 20 minutes or until heated through and cheese is melted.
