Paleo, Gluten and Grain Free Sandwich Bread

I like to substitute the butter and yogurt in this wonderful paleo bread recipe for coconut oil and coconut cream, it makes it even more delicious and gives it a delicious flavor.

Ingredients

  • 2

    cups almond flour

  • 1/3

    cup + 1 tablespoon flaxseed meal

  • 1

    teaspoon whole flaxseed

  • 1/2

    teaspoon salt

  • 1

    teaspoon baking soda

  • 1/2

    cup arrowroot powder

  • 6

    tablespoons butter

  • 4

    eggs

  • 1

    teaspoon apple cider vinegar

  • 1/2

    cup greek plain yogurt

Directions

Mix the almond flour, flaxseed meal, whole flaxseed, salt, baking soda and arrowroot powder. Melt the butter and whisk together with the eggs, apple cinder vinegar and yogurt. Combine with the dry mixture and pour batter into an 8½” x 4½” medium loaf pan greased or lined with parchment paper. Sprinkle with whole flaxseeds on top. Bake at 350°F for 25 minutes or until a toothpick inserted into the center of the bread comes out clean. Let bread cool on a wire rack, cut into thin slices and serve.
