Chili Rellenitos - Mother

Ingredients

  • 1 4oz can diced green chilies drained
  • 1 small jar diced pimentos drained
  • 1 lb cheddar cheese grated
  • 3 eggs beaten until frothy
  • Tabasco – salt

Preparation

Step 1

Toss cheese, chilies and pimentos until thoroughly mixed. Add eggs and seasoning.

Pour into a 9”x9” dish. Bake at 350 for about 25 minutes. May be made a couple of days ahead. Can also be frozen.


I leave out the pimentoes...personal taste.
