Ingredients

  • 1 egg, unbeaten
  • 1 cup yellow self-rising corn meal mix
  • 1 (8 1/2 oz) can cream style corn
  • 1/2 cup milk
  • 2 tablespoons oil or melted shortening
  • 1 teaspoon sugar
  • 4 oz. (1 cup) shredded Cheddar cheese
  • 2 tablespoons chopped jalapeno peppers or chopped
  • green chilies

Step 1

Heat oven to 450°F. Grease an 8 inch square baking pan. In a large bowl, combine all ingredients; mix well. Pour batter into greased pan. Bake at 450°F for 25 to 30 minutes or until golden brown. Cool in pan 10 minutes.
