Ingredients
- 4 cups cut-up rhubarb
- 2 cups sugar
- 1/4 cup flour
- 1/2 tsp cinnamon
- 3 eggs
- 3 Tbsp milk
- 1 Tbsp butter
- 2 uncooked 9" pie shells
Preparation
Step 1
Mix sugar, flour & cinnamon, set aside
Beat eggs slightly and add milk
Mix sugar mixture and egg mixture
Add rhubarb
Pour into 9" pastry lined pie pan
Dot with butter
Cover with the other pie crust and seal edges
Brush top crust with a little milk and sprinkle with sugar
Bake at 400 degrees for 50-60 minutes until nicely brown
