Margarita Cupcakes

Ingredients

  • Cake:
  • 1 (18.25 oz.) pkg White Cake Mix
  • 3 Egg Whites
  • 1 (10 oz.) can Frozen Margarita Mix
  • 2 T. Vegetable Oil
  • 1 T. Grated Lime Peel
  • 1 T. Lime Juice
  • Frosting:
  • 8 oz. Cream Cheese
  • 1/2 c. Unsalted Butter, softened
  • 1 T. Grated Lemon Peel
  • 1 T. Lime Juice
  • 5 c. Powdered Sugar

Preparation

Step 1

In a large mixing bowl, beat together all of the cake mix ingredients. Pour batter into cupcake cups.

Bake at 350 for 30-35 minutes (or until a toothpick comes out clean). Allow to cool.

To make frosting, beat the cream cheese and butter until fluffy. Stir in lemon peel and lime juice. Beat in powdered sugar, 1 cup at a time, scraping the sides of the bowl thoroughly after each addition. Spread over cooled cupcakes.
