Banana Waffles with Maple Walnut Syrup

Ingredients
- SYRUP
- 2 T all-fruite cherry or berry jam
- 2 T maple syrup
- 3/4 t frozen orange juice concentrate, undiluted
- WAFFLES
- 2 medium ripe bananas, mashed
- 1 1/2 t corn oil
- 1/4 C egg whites
- 3/4 C low fat milk
- 1 t vanilla
- 3/4 C whole wheat flour
- 1/4 C flour
- 1 t baking powder
- 1/4 t salt
- 4 t toasted and chopped walnuts

Preparation
Step 1
SYRUP
Combine all the ingredients for the syrup, mix well, and set aside. Preheat a waffle iron.
WAFFLES
Combine the bananas, corn oil, egg whites, milk and vanilla in a bowl and beat until blended. Add the flours, baking powder and salt and mix well. Spray waffle iron with nonstick cooking spray. Spoon 3/4 C of the batter onto the center of the waffle iron. Cook until a golden brown or until it stops steaming. Repeat with the remaining batter.
Serve with 1 tablespoon of syrup and 1 teaspoon of toasted walnuts.
