Many Mushroom Soup

  • 3 tbsp butter
  • 3 tbsp oil
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1 lb mixed mushrooms
  • 3 cups chicken broth
  • ¼ cup white wine
  • 2 tbsp tomato paste
  • ½ parsley, minced
  • pepper to taste



Step 1

Melt butter and oil in large saucepan. Sauté onion, and then add garlic, cook slowly over low heat, 10 minutes. Add sliced mushrooms, cover and cook over medium heat about 5 minutes. Add broth, wine, and tomato paste. Simmer 10 minutes. Add parsley & fresh ground pepper. Serve.
