Chicken Breasts in Tarragon

Ingredients
- 2 whole chicken breasts, skinned and boned
- 2 Tbs. butter
- 2 tsp. flour
- 1/2 tsp. salt
- 1/2 tsp. leaf tarragon, crumbled, or 1 1/2 tsp. snipped fresh tarragon
- 1 tsp. Dijon-style mustard
- 1/2 cup dry white wine
- 1/2 cup half-and-half

Step 1
Sauté chicken breasts in butter in a large skillet for about three minutes on each side. Remove to a serving plate and keep warm. Add flour, salt, tarragon and mustard. Gradually stir in the wine, cook, stirring up the browned bits in the pan. Add half-and-half, cook until the mixture thickens slightly. Pour over the chicken breasts.
