Yellow Squash Casserole

Ingredients

  • 2 lbs sliced yellow squash
  • 1/4 C chopped onion
  • 1 can cream chicken soup
  • 1 C sour cream
  • 1 C shredded carrots
  • 1 8oz pkg. herb stuffing mix
  • 1/2 C melted butter

Preparation

Step 1

Boil squash and onion for 5 min; drain. Mix soup and sour cream then stir in carrots; fold in squash and onion. Combine stuffing and butter.

Spread half stuffing in lightly buttered 12x7-1/2 baking dish. Spoon vegetable mixture over stuffing. Sprinkle remaining stuffing over top.

Bake 350 degrees for 25-30 minutes.
