Ingredients

  • Mix the following ingredients and let the avacados marinate for at least thirty minutes:
  • Juice of one lime
  • 1/4 cup red wine vinegar
  • 1 Tbsp Tabasco
  • 2 Tbsp veggie oil
  • 3 garlic cloves, minced
  • 1/4 tsp pepper
  • 3/4 tsp salt
  • 3 firm avacados, chopped
  • Combine the rest of the ingredients below and then add the avacados, gently mixing it all together:
  • 1 can white beans
  • 1 can black beans
  • 1 can pinto beans
  • 3 cups frozen corn
  • 1 cup sliced green onions
  • 1 cup fresh cilantro, chopped
  • 1 lb. cherry tomatoes, halve
