Pumpkin Pie

Ingredients

  • 1 can pumpkin puree
  • 3/4 c sugar
  • 1 1/2 tsp cornstarch
  • 1/2 tsp fine sea salt
  • cinammon
  • vanilla
  • 1 1/2 c whole milk
  • 2 eggs at room temp

Preparation

Step 1

Preheat oven to 450F
Put pumpkin, sugar, cornstarch, salt. cinnamon and vanilla in a bowl and beat low-medium speed for 2 min
Pour in milk in 2 additions
Add eggs and beat until absorbed, 2 additional minutes
Pour mixture into pie crust pan and bake for 15 minutes, then lower heat to 375F and bake until a finger dabbed onto the surface comes clean, 30-40min
Remove pie from oven and let cool for 1 -2 hrs.
Slice and serve or cover with plastic wrap and refrigerate for up to 3 days
