Ingredients

  • 2 cups shredded white extra old cheddar cheese
  • 1 Tbsp flour
  • 4 cups cherry tomatoes
  • 1/4 cup shredded fresh basil
  • 2 Tbsp coarsely chopped fresh chives
  • 8 cups mixed baby greens
  • 1/3 cup grape seed oil
  • 2 Tbsp balsamic vinegar
  • 3/4 tsp salt
  • 1/2 tsp pepper

In bowl, mix cheese with flour. Using ¼ cup for each frico cup and baking only 2 at a time, mound cheese mixture on parchment paper-lined baking sheet; pat to flatten slightly. Bake in centre oven at 350 for 11-12 minutes or just until lightly golden around edge, watching carefully to prevent browning. Let stand on pan for 1 minute. With metal spatula, immediately transfer to inverted drinking glass and gently shape around glass. Let cool. (Make ahead and store in paper towel lined container at room temperature for up to 2 days.) Whisk dressing ingredients together; set aside. Cut tomatoes in half and place in bowl. Add basil, chives and 3 Tbsp of dressing, toss to combine. In separate bowl toss mixed greens with remaining dressing. Arrange in frico cups; top or surround with tomato mixture.
