Potato Pancakes with Applesauce

  • 3 medium baking potatoes
  • 1 egg
  • 2 tablespoons onion, finely grated
  • 2 1/2 to 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 cup oil (or less, to taste)
  • 1 to 1 1/2 cups applesauce (fresh if possible)

Step 1

Directions:

1. Peel potatoes and drop in cold water until ready to grate

2. In mixing bowl, beat egg slightly. Add grated onion and gradually beat in flour and salt.

3. One at a time, pat potatoes dry and grate coarsely into colander. Squeeze as much moisture as possible out of grated potato.

4. Immediately stir potato into egg batter and mix well. Repeat process for remaining potatoes

5. In heavy 12 inch skillet or electric fry pan, heat oil quickly until it splutters. The more oil you use, the crisper the potato cake

6. Pour one half of batter into hot skillet and flatten out with spatula to cover the skillet evenly.

7. Cook over medium high heat for a couple of minutes on each side. Pancakes should be dark golden brown and crisp around edges. you may need to add more oil to skillet for each new pancake.

8. Serve as soon after cooking as possible with applesauce. Freshly made warm applesauce is best.
