Ingredients

  • ¾ pound sausage

  • ¼ cup minced onion

  • ¼ cup minced green bell pepper (I used a small jalapeno too)

  • 1 (12-ounce) can refrigerated biscuits (10 count)

  • 3 eggs beaten

  • 3 tablespoons milk

  • salt, pepper for egg mixture

  • ½ cup shredded Colby-Monterey Jack cheese

Directions

Preheat oven to 400 degrees In large skillet brown sausage, onions and peppers. Drain, crumble and set aside. Separate biscuits and flatten each to line the bottom and sides of 10 muffin cups. Evenly distribute the sausage mixture between the cups. Mix the eggs and milk (season with a sprinkle of salt, pepper) and pour over sausage mixture. Top with shredded cheese. Bake for 18 to 20 minutes or until filling is set. Can make ahead of time and reheat in oven or microwave.
