Ingredients
- 4 (4-ounce) boneless, skinless chicken breasts
- 1/4 pound fresh mozzarella, thinly sliced
- 12 large basil leaves
- 4 slices prosciutto
Preparation
Step 1
Slice each chicken breast horizontally without cutting all the way through. Open each up like a book. Sprinkle each breast with salt and pepper. Divide mozzarella
and basil evenly among breasts. Fold chicken closed, then wrap each breast with 1 slice prosciutto.
Heat a large cast-iron skillet over medium-high
heat until very hot. Add 1 tablespoon olive oil, then
carefully place chicken breasts in skillet. Reduce
heat to medium and cook until prosciutto has crisped, about 3 minutes. Turn breasts, cover pan and cook 10 minutes more or until chicken is cooked through. Cool slightly before serving.
