Ingredients
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 1 cup milk
- 8 oz. Velveeta
- 10 oz. Ro-Tel
- 2 cups chicken, cooked and shredded
- 1 t. cumin
- 1 t. chili powder
- 1 t. paprika
- salt and pepper to taste
- colby jack or mexican blend cheese
- Fried tortilla strips

Step 1
Melt butter over medium heat. Stir in flour and cook, stirring often, for 3 minutes. Slowly whisk in small amounts of chicken broth at a time, then whisk in milk. Reduce heat to low and stir in Velveeta. Stir until melted. Stir in Ro-Tel, chicken and spices. Heat through. Add cheese to bowl.
