Ingredients

  • 1 10-oz pkg chopped frozen spinach
  • 1/2 C toasted pecan pieces
  • 6-8 oz sliced mushrooms
  • 1/4 C minced onion
  • 2 cloves garlic; minced or pressed
  • 1/2 C grated cheese; some shld be Parm
  • 1 C ricotta cheese
  • Dry white wine - to deglaze + 1-2 T
  • 1/2 tsp black pepper
  • salt
  • A little nutmeg

Preparation

Step 1

Put pecans in food processor. Add the thawed, squeezed spinach.

Cook the onion in the skillet w/ a little oil until begins to soften. Add mushrooms, cook on med-high until most of the moisture is gone and mushrooms are browning. Deglaze the pan w/ white wine.

Add garlic & seasonings and cook for a minute +.

Add contents of pan + cheeses to food processor and process. Add wine, 1 T at a time, if needed.

Heat through in a 350 oven until the top browns.
