Panko Halibut

Ingredients
- - 2-3 lbs. fresh Halibut, cut into fillet strips (other white fish will do as well)
- - 1 pkg. Panko Rice Breading (ex: Sun Luck is one brand, find it in oriental section)
- - 3 eggs whipped w/ [butter] milk
- - 1 pkg. Krusteaz Bake & Fry seasoning
- - ample amount of canola oil

Preparation
Step 1
1) Heat up oil at least 1 inch thick in skillet, on medium/medium-high NOTE: do not let it get too hot
2) Then, begin to dip fillets in the following order:
a. Krusteaz Bake & Fry seasoning, then
b. Egg mixture, then
c. Panko breading
3) Turn fillets on all sides to cook evenly, a few minutes each side (don’t leave the pan)
4) Fillets should be golden brown, and you should be able to “glide” a fork smoothly through it, when it’s perfectly done. If it “sticks” when you push the fork in, it’s not quite done, but only leave on 1 or 2 minutes more
- Serve with a buttery rice pilaf, and steamed veggies
- Garnish with Ivar’s tarter sauce
