Java Barbecue Sauce

"This is one of our favorite recipes for a lazy afternoon barbecue with good friends. We like it as a glaze for chicken, lamb or pork. Our friends have since told us that they use the recipe as a base but add or subtract to the ingredients as the mood fits."

Ingredients

  • 3 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 1/2 cup (4 ounces) brewed espresso, hot or cold
  • 1 cup ketchup or cocktail sauce
  • 1 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • 3 tbsp brown sugar
  • 1/2 tbsp dry mustard
  • 1/4 tsp garlic powder/salt
  • 2 tbsp honey

Preparation

Step 1

In a saucepan, heat the olive oil. Add the onion and saute until transparent, about 3 minutes. Add the remaining ingredients and heat until blended and hot, stirring occasionally. Cool to room temperature, then refrigerate. After the charcoal is lit, remove the sauce from the refrigerator and warm over medium heat. This yields enough sauce to coat/glaze one whole chicken, or 3 pounds lf lamb or pork, cut in serving pieces.
