Japanese Fried Rice

This is the recipe that my mom was famous for! She got it from my Uncle Billy's first wife, Akiko.

Ingredients
- 6-10 packages green onions, chopped
- (If you mostly use the whites, you will need 10 pkgs...if you use the greens, you can use 6 pkgs or more)
- Carrots, at least 1 lb., grated
- 4-5 Bell peppers, diced
- 1 lb. hot sausage
- 2 lbs. regular sausage
- 4-6 cups cooked rice

Preparation
Step 1
Cook rice and set aside. Cook sausage and drain. Add onions and peppers and stir-fry. Add carrots and cook until softened. Stir in rice and simmer to meld flavors. Can be cooked ahead and reheated.
