Ingredients
- 3 TBSP olive oil
- 1 elephant clove of garlic, minced (double if regular)
- 1 lb. sweet Italian sausage; casings removed
- 1 medium onion, chopped
- 2 lbs. Roma tomatoes, diced
- 1 6oz. can tomato paste
- 1/2 cup dry red wine
- 1 tsp. sugar
- 3 TBSP oregano, minced

Preparation
Step 1
1. Heat olive oil in a large saucepan over medium heat.
2. Add garlic and stir 1 minute.
3. Add sausage; break up sausage with a spoon and cook until lightly browned.
4. Add onions and tomatoes and cook 4 minutes.
5. Mix in wine, tomato paste and sugar.
6. Reduce heat and simmer for about 20 minutes stirring frequently.
7. Stir in fresh oregano and remove from heat.
