Lobster Gram Lobster (Broiled)

Once these lobsters are defrosted in the refrigerator for 24-36 hours, this is the best way to prepare them in the broiler.

  • Clarified butter

Preparation

Step 1

1. With kitchen scissors or a very sharp knife, cut lengthwise through the top of the shell (the round, hard sidde of the shell). Note: when cutting the shell, you will also be cutting the meat, which is okay - this butterflies the meat for you and makes a very nice presentation. Remove the digestive tract (the dark line that runs along the length of the tail) at this time.

2. Pry open the shell using your fingers. Starting at the wide end, carefully loosen meat from bottom of shell, keeping meat attached at the small end. Lift the meat through the cut shell opening, and place on top of the shell.

3. Brush the lobster meat with melted butter. Broil on high approximately 5" from heat for 2 minutes. Baste with more melted butter and broil for additional 3 minutes or until lobster meat turns opaque and lightly browned. Watch closely to avoid overcooking.
