Chocolate Chip Expresso Muffins

These are great served with coffee and shared with friends! My son's teacher all but begged for me to make them, and still ask for them after 4 years since she retired. As always, make extra and share with a friend (or teacher!)

Ingredients
- 6 Tablespoons Butter
- 2/3 Cup sugar
- 1 egg
- 1 tsp. Vanilla extract
- 2 Tablespoons Powdered instant espresso
- 2 Tablespoons Boiling water
- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon Salt
- 1/4 cup milk
- 3/4 Cup semi sweet chocolate chips or white chocolate chips.
Preparation
Step 1
Preheat oven to 375 degrees. Grease 12 regular muffin cups or 6 jumbo muffin cups. In large bowl, combine butter and sugar. Beat with mixer until fluffy. Beat in egg and vanilla.
In a small bowl, combine instant espresso and boiling water.
In a separate bowl, combine flour, baking powder, and salt. Add gradually to butter mixture. Add espresso mix and milk to butter mixture and blend. Fold in chocolate chips. Spoon batter into muffin pans. Bake 20 minutes. Tops should be golden brown.
