  • 1/4 cup plus 2 tbsp. olive oil
  • 2 cups chopped onion
  • chicken seasoning
  • 6 large, boneless, lean pork chops 1-1/2 in. thick
  • 1 to 2 (12 oz.) bottles beer
  • 2 large onions, sliced
  • parsley for garnish

Step 1

Heat 1/4 cup oil in frying pan over medium heat. cook the chopped onions until light brown. Move the onions to the sides of the pan. Rub seasoning on both sides of the chops to taste. Brown the chops in the pan with the onions. Add enough beer to cover he bottom of the pan. Cover, reduce the heat to low, and simmer for 1 hour, checking often and adding more beer if needed. In a separate pan saute the sliced onions in the remaining 2 tablespoons oil over medium-high heat until browned. Serve over the chops and garnish with parsley
