This is really good, and healthy, too. Great for dipping with tortilla chips. This recipe if from our friend Sarah Rankin.
can (15 oz.) black beans, drained and rinsed
can (11 oz.) vacuum packed corn, drained
C diced red pepper
C diced red onion
TBSP white vinegar
TBSP minced jalapeno pepper
tsp. ground cumin
tsp. chili powder
Mix vinegar and spices, first. Then, combine all ingredients in a bowl. Serve with chips, or in tortilla as quesadillas.
