Ingredients
- Salad:
- 4 cups cauliflower, chopped (21.2 carbs)
- 4 cups broccoli, chopped (23.2 carbs)
- 1/2 cup red onion, chopped (7.5 carbs)
- 1 cup red seedless grapes, halved (29 carbs)
- 1/4 cup almonds, slivered
- 1/4 cup bacon, cooked & crumbled
- Dressing:
- 3/4 cup mayonnaise
- 1 to 2 packets Splenda
- 1/4 to 1/3 cup white distilled vinegar
Preparation
Step 1
Combine chopped bite-sized pieces of cauliflower and broccoli in a large mixing bowl. Add red onion, split seedless grapes, almonds, and bacon pieces. Mix together until evenly blended.
In a small bowl, whip mayo, Splenda, and vinegar until blended and creamy. Add to veggie mixture and fold in until evenly coated.
Best served chilled.
