Cruciferous Crunch Salad

This would be a great salad for a summer bbq.

Ingredients

  • Salad:
  • 4 cups cauliflower, chopped (21.2 carbs)
  • 4 cups broccoli, chopped (23.2 carbs)
  • 1/2 cup red onion, chopped (7.5 carbs)
  • 1 cup red seedless grapes, halved (29 carbs)
  • 1/4 cup almonds, slivered
  • 1/4 cup bacon, cooked & crumbled
  • Dressing:
  • 3/4 cup mayonnaise
  • 1 to 2 packets Splenda
  • 1/4 to 1/3 cup white distilled vinegar

Preparation

Step 1

Combine chopped bite-sized pieces of cauliflower and broccoli in a large mixing bowl. Add red onion, split seedless grapes, almonds, and bacon pieces. Mix together until evenly blended.

In a small bowl, whip mayo, Splenda, and vinegar until blended and creamy. Add to veggie mixture and fold in until evenly coated.

Best served chilled.
