Ingredients

  • 1 pkg. Eden Organic Kamut Spirals
  • 1/4 C olive oil
  • 1/4 tsp. red pepper flakes
  • 1 C onion
  • 2 TBSP. minced garlic
  • 1 C artichoke hearts packed in water
  • 1 med. yellow pepper, chopped.
  • 2 C broth
  • 1 C pitted black olives
  • 1 can garbanzo bens
  • 1 can tomatoes
  • 1/2 tsp. salt
  • 1 TBSP. parsle, minced
  • 1 pinch pepper

Preparation

Step 1

Cook pasta per pkg. directions until al dente. While the pasta is cooking, place olive oil, red pepper flakes and onions in a skillet on medium and saute until golden. Add garlic, artichokes, and yellow pepper. Saute until just browned. Add broth, olives, garbanzo beans and tomatoes. Gently simmer for 5 minutes. Place drained pasta in a large bowl. Pour sauce over pasta and toss. Season to taste with freshly ground black pepper and salt. Garnish with parsley and serve.
