Ingredients
- 1 # dried red kidney beans
- 4 qt water
- 1/2 C butter or oleo
- 3/4 C chopped onion
- 3/4 C chopped celery
- 3/4 C chopped green pepper
- 2 tsp minced garlic
- 2 bay leaves
- 2 tsp salt
- 2 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp cayenne
- 1/2 tsp oregano
- 1 # andouille sausage cut in 1" pieces
- 1/2 C finely chopped parsley
Preparation
Step 1
Sort beans, wash, cover with water 2" above beans. Let soak overnight. Drain and add 4 qts water, bring to a boil, reduce heat, cook uncovered 1 1/2 hrs stirring occasionally.
Melt butter in large skillet. Add onion, celery, green pepper and garlic. Saute until tender. Stir vegetables and next 6 ingredients into beans, cook uncovered 1 hour, stirring occasionally adding additional water if needed.
Bake sausage at 350 °F for 20 minutes. Drain well and stir into beans. Cook uncovered 30 minutes. Remove bay leaves and stir in parsley. Serve over rice.
