Muffins - “Nutella” Filled Banana Muffins

Ingredients

  • 1 3/4 cup white whole wheat flour
  • 2 ripe bananas smashed
  • 1/3 cup applesauce
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 T coconut oil
  • 1/4 cup + 1 T milk (I used almond milk)
  • 1/2 tsp salt
  • Homemade Vegan Nutella or your favorite filling.

Preparation

Step 1

Preheat oven to 350. Combine all the dry ingredients in one bowl. Combine all the wet ingredients except the nutella in another. Add wet to dry. Spoon a small amount of batter into the bottom of each muffin cup. Spoon a large amount of Nutella on top of that. Cover the Nutella with muffin batter. Repeat these steps for all the muffins. Bake for about 14-17 minutes. I got 12 regular sized muffins out of this batch. Enjoy!
