Ingredients
- 7 lb of cucumbers - sliced
- 2 cups lime in 2 to 3 gallons of water
- 1/3 cup pickling salt
- 2 tablespoons alum
- 2 quarts cider vinegar
- 4 lbs of sugar
- 3 ounce box sauers pickling spice
Preparation
Step 1
Soak cucumbers in lime water for 12 to 14 hours. Dain and rinse until water is clear. Soak 4 hours in salt and enough water to cover cucumbers. Drain and soak 2 hours in cold water. Drain and bring 5 quarts of water to a boil with alum - enough water to cover cucumbers. Drain and dip in clear boiling water and drain. Mix vinegar, sugar and spices in enough water to cover cucumbers and boil 30 minutes in mixture. Let set until later that day or next day and put in jars with juice and seal. Put jars in water covering tops and boil 5 minutes and take out and tighten lids.
