Asparagus Pasta

Ingredients

  • 1 # fresh asparagus
  • 2 Tbsp olive oil
  • 6 Tbsp butter
  • 2 green onions, chopped
  • 1/2 C parmesan cheese
  • 1/2 # fresh pasta

Preparation

Step 1

Trim asparagus 1/2" long. Blanch for 2 minutes in boiling water and drain.

Heat oil, butter, green onions. Saute for a few minutes. Toss in asparagus and saute 1 minute. Add fresh ground pepper and add to pasta.

Top with Parmesan.
