Ingredients

  • 4 pounds beef stew
  • 2 large onions peeled and sliced
  • 3 cups chopped celery
  • 1 pound carrots peeled and cut coin shape
  • 2 Tablespoons parsley
  • 2 teaspoons sugar
  • 2 pounds can stewed tomatoes
  • 48 ounces V-8® vegetable juice
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 Tablespoons minute tapioca
  • 6 medium potatoes peeled and cut in wedges

Preparation

Step 1

1. Place raw meat in roasting pan. No need to brown. Sprinkle meat with salt, pepper and parsley. Add onions, celery and carrots. Pour 1/2 cup "V-8" juice in cup and set aside. Pour can of juice over meat and vegetables.

2. Add sugar and tapioca to reserved juice. Stir and pour over meat. Gently stir into other juice. Sprinkle crushed bay leaves on top. Sprinkle w/ dah of salt and pepper/ Cover tightly with foil and bake for 5 hours with out peeking.
