Corn bread fritters
pancake style cornbread patties perfect with any meal.
- 1 c. yellow, sifted unbolted corn meal
- 1 tsp. salt
- 1 c. buttermilk
- 3/4 c. self rising flour
- 1/2 tsp. baking soda
- 1/2 c. water
For thinner fritters, increase buttermilk. Mix meal, flour, salt, and soda. Stir in buttermilk and water until smooth. Drop by serving spoon in hot oil in skillet, browning on both sides. Drain on paper towels.
